At our house this month, we've been looking for grain-free, dairy free recipes for breakfast – and one of our momstown Burlington mamas contributed this fantastic recipe. Now you can have quinoa porridge with apples and raisins for breakfast!
1/2 cup quinoa (rinsed) 1/2 tsp cinnamon 1 1/2 cup unsweetened almond milk 1/2 cup water dash of sea salt splash of vanilla two unpeeled apples, chopped 1/2 tbsp sugar 1 tbsp butter 1/4 tsp cinnamon (for apples) 1/2 cup golden raisins
toast quinoa and cinnamon in a dry pot for stirring frequently
add almond milk, water, salt and vanilla
bring to a boil
cover and simmer on low for 20 minutes
In a separate pan, add butter, apples, cinnamon and sugar
Cook on medium heat until apples soften, stirring regularly
Add apples to quinoa
Cover and continue cooking for 5 minutes
